Line a 13 x 9 x 2-inch Baking pan with heavy duty foil, leaving about 1 1/2" foil
for a collar. In pan, combine rice, tomatoes, green pepper, onion and seasonings.
Suatee seasoned squirrel pieces in oil until lightly browned. Place Squirrel on
rice mixture in foil-lined pan. To cover use casserole wrap, bake 1-1/4 to 1-1/2
hours or until meat can be easily removed from the bone.
