Small Game Recipes: Squirrel: Southern Squirrel
Ingredients
  • 4 squirrels, quartered, seasoned w/ salt & pepper
  • 1 cup brown rice
  • 2 cans tomatoes, diced
  • 3/4 cup green pepper, chopped
  • 3/4 cup onion, chopped
  • 1/2 tsp. seasoned salt
  • 1/8 tsp. garlic powder
  • 1/8 tsp. black pepper
  • 3 Tablespoons vegetable oil

Directions
Line a 13 x 9 x 2-inch Baking pan with heavy duty foil, leaving about 1 1/2" foil for a collar. In pan, combine rice, tomatoes, green pepper, onion and seasonings. Suatee seasoned squirrel pieces in oil until lightly browned. Place Squirrel on rice mixture in foil-lined pan. To cover use casserole wrap, bake 1-1/4 to 1-1/2 hours or until meat can be easily removed from the bone.
