This is a cooked marinade, which can be stored in the refrigerator and used as needed for venison, mutton, or rabbit:
Saute the following in 1/4 cup oil until they begin to color:
- 1 cup chopped celery
- 1 cup chopped carrot
- 1 cup chopped onion
Add 8 cups vinegar, 4 cups water and 1/2 cup chopped parsley and the following ingredients:
- 3 bay leaves
- 1 tbsp. thyme
- 1 tbsp. basil
- 1 tbsp. cloves
- 1 tbsp. allspice berries
- Pinch of mace
- 1 tbsp. crushed peppercorns
- 6 crushed garlic cloves
