Miscellaneous Game Recipes: Marinades: Marinade for Venison, Mutton, or Rabbit
Ingredients
    This is a cooked marinade, which can be stored in the refrigerator and used as needed for venison, mutton, or rabbit:

    Saute the following in 1/4 cup oil until they begin to color:
  • 1 cup chopped celery
  • 1 cup chopped carrot
  • 1 cup chopped onion


  • Add 8 cups vinegar, 4 cups water and 1/2 cup chopped parsley and the following ingredients:
  • 3 bay leaves
  • 1 tbsp. thyme
  • 1 tbsp. basil
  • 1 tbsp. cloves
  • 1 tbsp. allspice berries
  • Pinch of mace
  • 1 tbsp. crushed peppercorns
  • 6 crushed garlic cloves

Directions
Simmer for 1 hour. Strain and cool. Put meat in sauce and heat 30 minutes at 200 degrees F.
