Small Game Recipes: Squirrel: Paprika Squirrel
  • 2 squirrels, bonless
  • 1/4 lb. butter
  • 2 shallots
  • 10 large mushrooms
  • 2 heaping Tablespoons Paprika
  • 3 cups cream
  • 1/8 lb. butter
  • Salt and Pepper

Season the squirrel with salt & pepper, fry in the 1/4 lb. butter until brown. Add the mushrooms, shallots and cream, reduce over low heat for about 20 minutes. Take the meat out and reserve.When it reaches a heavy consistency, swirl in the butter.Pour over the squirrel.

Serve with wild rice or any pasta.
