Cut the fish into serving size pieces.
Mix flour, lemon pepper, & salt in a shallow dish.
Beat egg white until frothy and place into another shallow dish.
Mix the breadcrumbs, cornmeal, lemon peel, and basil in a third shallow dish.
Dip one side of the fish pieces into the flour mix & shake off the excess. Then
dip the same side into the egg white, then the crumb mixture.
Place fish, coating side up on a shallow baking dish sprayed with the cooking spray.
Bake at 400 degrees for 6-12 minutes or until the fish flakes easily.
