Directions
Cut a piece of aluminum foil at least 2 inches longer on each side than the salmon.
Place salmon on a flat, clean work surface. Rinse the salmon, then pat dry. Place
the fish on the center of the aluminum foil. Season the flesh side of the fish
with salt and pepper.
Preheat oven to 400 degrees.
Heat oil in a saucepan over medium heat. Stir in the maple syrup, orange juice
concentrate, sherry, mustard, soy sauce and ginger. Bring mixture to a simmer,
then remove pan from heat. Drizzle the flesh of the salmon with 2 to 4 Tbsp. of
the maple syrup mixture. Using a spoon, smear the mixture over the flesh side of
the fish. Seal aluminum foil and place on a baking sheet. Place baking sheet in
the middle of the oven. Cook fish at 400 degrees for 12 minutes, then reduce heat
to 350 degrees and cook 6 to 8 minutes more. Remove salmon from the oven and place
on a large platter. Cut the salmon into individual serving fillets and drizzle
with remaining maple syrup mixture.
