Place water, 1/2 of the wine, pepper and squirrels in frying pan on medium-low
heat. Cover, cook slowly for 45 minutes to 1 hour. Watch carefully to keep water
level up. You will have to keep adding water, also turn meat occasionally. Remember
squirrels lead an active life so they are tough; they must be cooked slowly. The
wine will help tenderize the meat and add a nice flavor to the game. After 45
minutes, add the remainder of the wine, a little water, marg. or oil, celery and
onions, Simmer 5 minutes. Add bouillon cube, spices, simmer until celery and
onions are partially cooked. Now turn heat up a little more to let water boil off.
As water disappears, add mushrooms. Just before it starts to fry, remove from heat.
